Water Glassing Eggs for Longterm Storage

Water glassing is a centuries-old technique for preserving fresh, unwashed eggs for up to a year or longer without refrigeration. It is very simple and easy to do.

Ingredients:

  • Fresh, unwashed eggs
  • 1 ounce (about 2 tablespoons) of calcium hydroxide (pickling lime)
  • 1 quart (4 cups) of clean, filtered water

Tools Needed:

  • Half-gallon glass jar with a lid (or another food-grade container)
  • Measuring cups
  • Whisk or spoon for mixing
  • Gloves (optional, for handling the lime)

Instructions:

  1. Prepare the Lime Solution:

    • In the half-gallon glass jar, pour in 1 quart of clean, filtered water.
    • Gradually add 1 ounce (2 tablespoons) of pickling lime to the water, whisking or stirring until it fully dissolves. The solution will turn milky white, which is normal.
  2. Choose and Prepare Eggs:

    • Use only fresh, unwashed eggs. Do not wash them before storing, as the natural protective coating (bloom) helps preserve the eggs.
    • Gently brush off any visible dirt, but avoid using water.
  3. Store the Eggs:

    • Carefully place the fresh eggs into the jar, pointed-side down.
    • Make sure all the eggs are completely submerged in the lime water solution. Add more water and lime (keeping the same 1-ounce lime to 1-quart water ratio) if needed to cover the eggs.
  4. Seal and Store:

    • Put the lid on the jar and seal it tightly.
    • Store the jar in a cool, dark place, such as a pantry or basement, where the temperature stays stable.
  5. Use the Eggs:

    • Eggs preserved in this way can last up to 12-18 months – maybe longer.
    • When ready to use an egg, take it out of the lime water, rinse it well, and use it like a fresh egg.

Notes:

  • Freshness Test: Always crack eggs in a separate bowl to check for freshness before using.
  • Discard any floating eggs, as fresh eggs will sink in the lime solution.
  • Egg yolks are often a bit more watery when water glassed. This can be improved by placing the egg in a fridge an hour before use.

This method, using a half-gallon glass jar(my fav!), is perfect for smaller batches of eggs and allows you to store a manageable amount while still keeping them fresh for the long term!
