Here’s a simple recipe for cornbread that you can easily make with shelf-stable ingredients!
Cornbread Recipe
Ingredients:
– 1 cup cornmeal
– 1 cup all-purpose flour
– 1/4 cup sugar
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1 cup milk (powdered milk can be used, just mix it with water)
– 1/4 cup vegetable oil
– 1 large egg (or 1 tablespoon of water mixed with 1 teaspoon of oil as an egg substitute)
Instructions:
- Preheat the Oven: Start by preheating your oven to 400°F (200°C).
- Mix Dry Ingredients: In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir them together until they are well mixed.
- Combine Wet Ingredients: In another bowl, mix the milk, vegetable oil, and egg (or egg substitute). Whisk them together until smooth.
- Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until everything is just combined. Don’t over-mix; it’s okay if there are a few lumps.
- Pour into Pan: Grease an 8-inch square baking pan or a similar-sized oven-safe dish. Pour the batter into the pan, spreading it evenly.
- Bake: Place the pan in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool and Serve: Once done, remove the pan from the oven and let it cool for a few minutes. Cut the cornbread into squares and enjoy!

my wife was born and raised in the deep south. she said to leave the sugar and flower out of the mix unless you want Jiffy brand cornbread. she also said to drop the vegetable oil and use lard. spoon some into a skillet with onions mixed in and fry the cornbread into flitters, oh yea, its good. the wife being from the south fries everything. canned green beans with onions, canned biscuits fried taste like donuts.
we have always used lard and Crisco. Wesson Oil and others not so much. it’s just a southern thing, peanut oil for fish, turkey’s and pork roasts deep fried on the outside cooker if we don’t smoke them.
come visit and set at the table with us one day. we’ll go into Morgan City, LA and eat one night. you may never leave after you have tasted that.
folks here live for good food! maybe it’s the reason that there is an obesity problem down here : )

No hunting this past season. Hope to do some turkey hunting in 2025 and get to fishing. So much water around Maine.
