    Sink your teeth into this perfect burger—crispy on the outside, juicy on the inside, and loaded with flavor. Here’s how to make it:

    🔥 Ingredients:

    • 1 lb ground chuck (80/20 for best flavor)

    • 1 tsp salt

    • ½ tsp black pepper

    • ½ tsp garlic powder

    • 4 slices sharp cheddar cheese

    • 4 brioche buns (buttered & toasted)

    • Lettuce, tomato, red onion, pickles

    • Your favorite condiments (mayo, ketchup, mustard)

    🍳 Instructions:

    1. Form Patties: Divide ground beef into 4 equal balls. Gently flatten into patties, slightly larger than your buns. Don’t overwork the meat!

    2. Season: Sprinkle both sides with salt, pepper, and garlic powder.

    3. Grill or Skillet: Cook over medium-high heat for ~3–4 min per side (for medium doneness). Add cheese in the last minute and cover to melt.

    4. Toast Buns: Toast the buttered brioche buns until golden.

Strawberry Freezer Jam!!!  I thought it was fitting to republish this and share it with those who may have missed it. Now – do you have a favorite recipe to share?     With strawberry picking season arriving across much of the country thought I would share this once again…….

    My kids are technically adults now, but they still love freezer jam.  Even though we are apart in miles (at the moment) I still feel the need to perform the same seasonal traditions as if they were still with me.  I would not usually make this delicious treat until late summer in Maine, but here in South Carolina, the strawberries are ripe and ready. When I asked Mr. Rourke if he had ever had strawberry freezer jam he gave me a puzzled look and stated that he had never heard of such a thing! I was again amazed at yet another food he had not tried. To say he is a meat and potato guy is an understatement. As a matter of fact, I just had him try a Big Mac for the first time EVER last week! I would say that he has a 99% approval rating of the food I have him try. The one thing he is not fond of is sushi. I am afraid that is a losing battle, but as long as there are Steak and Sushi joints we both win!

    Anyway, back to the freezer jam. This recipe is super easy and is found on the inside of the label of the container of RealFruit Instant Pectin by Ball. I believe you can also find a similar recipe on the inside of a box of Certo. The recipes differ by fruit being used. I have only ever used strawberries but maybe trying something different real soon. I made the jam outside of our camper for more space and because I like being outside. Thanks to our outdoor kitchen I was able to rinse the strawberries after hulling and slicing them.

    Supplies: Three mixing bowls, funnel, strainer, potato masher, knife, mason jars, spoons, measuring spoons, and measuring cups.

    Ingredients: Strawberries (about 6 quarts of strawberries made 11 8 ounce jars of jam), sugar, RealFruit Instant Pectin

    What you see in the picture is double the amount plus some of the strawberries I needed. I was unsure and the extra berries were put to good use in a strawberry upside-down cake that was also delicious and enjoyed by my coworkers.

    Cut, wash, strain, and mash strawberries. You will need 1 and 2/3 cup. Set aside.

    In a clean bowl add 2/3 cup sugar and 2 tablespoons of pectin and mix together with a spoon.

    Add the sugar/pectin mixture to the strawberries a little at a time, stir for 3 minutes until dissolved.

     

    Put in jars using a funnel.

    And there you have it! Strawberry Freezer Jam! Store in the freezer until ready to use then keep in the fridge. It is delicious on toast or on a PB & J. Rourke’s favorite way to have it is on the top of Breyer’s Extra Creamy Vanilla Ice Cream.

    I know that this may not be a prepper item as it needs to be refrigerated to be stored but I like that it is a quick easy way to use up berries with very few ingredients.

  • Recipe:  Foil Wrapped Garlic Steak & Potato

    Recipe: Foil Wrapped Garlic Steak & Potato

    The last time I posted this recipe someone sent a message and was pissed off because they made it and it did not meet their expectations. Disclaimer: It might be better, or worse than what you expect. “Such as life.”

    This oven or grill steak and potato recipe offers up some savory flavors and can be easily modified depending upon available ingredients.

    Growing up in a meat and potato family(and pasta every Wednesday), this recipe has become a frequent offering at the dinner table.

    Juicy, tender steak with potatoes and an assortment of flavorings including GARLIC  – can’t get much better.

    A few notes:

    • The rarer you desire the steak to be the larger the pieces should be cut.
    • Generally, chunks should be between 1″ – 2″ cubes.
    • Total cook time should be around 20 – 30 minutes.

     

    Ingredients

    • 2-2½ pounds top sirloin steak, trimmed of fat and cut into cubes
    • 1 pound baby yellow potatoes, quartered or halved
    • 3 tablespoons olive oil
    • salt and pepper, to taste
    • 1 tablespoon minced garlic
    • 1 teaspoon onion powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried parsley
    • 1 teaspoon dried thyme

    Note: Weber CHOP ‘N STEAK Seasoning is a multi-use seasoning that can be used if all flavoring ingredients are unavailable.

     

    Instructions

    1. Combine potatoes, steak, olive oil, salt, pepper, garlic, and seasonings in a large bowl.
    2. Tear off four 12 x 12-inch sheets of aluminum foil or 12 x 24 inch to double wrap. Divide steak and potatoes between all four sheets and wrap the foil tightly.
    3. Grill over high heat for approx 20-25 minutes or bake in oven at 425 degrees for 20-25 minutes.
    4. Additional spices can be added by opening the foil packets and add as desired.
     I like boiling or microwaving my potatoes a bit prior to grilling to make sure they are completely done when the steak reaches perfection.

    Food Storage Recipe: Oven-Roasted Turkey SPAM and Potatoes[2020]

    What foods to store in a food storage program is a popular topic – but what about making meals from that food? Not so much.

    With this recipe, I put together something a little different – Turkey SPAM & Canned Potatoes. SPAM is often considered a joke when it comes to food storage but the truth is it’s a viable source of sustenance. As a kid, I used to eat it on a regular basis thinking it came from small SPAM animals that were raised on a farm somewhere. I liked it but once I was old enough to decide what I ate I moved on to other things like……cake. Cake is good.

    Not knowing how well I would like SPAM some 30 years later I grabbed a can of Turkey SPAM. Out to the grill with a cast iron pan and a can of potatoes.

    Here we go…..

    Ingredients

    • 1 can Turkey SPAM(say that 10 times real fast)
    • 1 can Whole Potatoes
    • salt, pepper, seasoning as desired

    Instructions

    • Apply non-stick spray to frying pan or use a seasoned cast iron pan
    • Set temperature to medium to medium-high
    • Open the SPAM, cut into cubes or slices – place in frying pan
    • Open can of potatoes, drain excess fluid – empty into frying pan
    • Cook until browning has occurred on most pieces of SPAM and potatoes.
    • Apply seasoning when food is almost complete.
    • Turn SPAM and stir potatoes every few minutes until done.
    • Serve and enjoy

    While this may not be the most delectable meal, however, I was surprised at just how good the SPAM was. Very good. I could imagine coming in from a cold winter patrol and absolutely loving this meal.

    At 655 calories(50+ grams of protein) this is very filling for one but could be split between two people as well.

    Canned SPAM is an excellent source of protein with a long shelf life – and fairly inexpensive. In this specific meal a simple can of potatoes and can of SPAM makes for a pretty tasty meal.

    Recipe: Rourke’s Survival Pancakes[2020]

    What foods to store in a food storage program is a popular topic – but what about making meals from that food? Not so much.

    You can’t get much simpler than preparing Rourke’s Survival Pancakes. If you’ve read 299 Days you will be very familiar with the role pancakes played in the book series. Wondering what that’s all about? Check it out here.  The foundation for these pancakes is any “Just Add Water” pancake mix. My favorites include Aunt Jemima and Hungry Jack’s versions.

    Ingredients

    2 cups pancake mix(follow instructions on box)
    1 1/2 cup water
    A pinch or twelve cinnamon sugar
    1 “dash” of Pure Vanilla Extract
    Aunt Jemima syrup

    Instructions

    • Following instructions on box combine pancake mix and water
    • Add the desired amount of cinnamon sugar. Start with a teaspoon. Want more cinnamon flavor? Add more next time. Want less? Add less next time.
    • Add a few drops of vanilla extract. A little goes a long way.
    • Stir until thoroughly mixed.
    • On a non-stick skillet heated to medium pour a 3″ circle of batter
    • Flip when pancakes bubble and bottoms are golden brown.

    Recipe Tip: Everyone has their own individual tastes so the recipe can be adjusted as needed. Have some canned fruit? Throw some small pieces in. Don’t care for cinnamon? Leave it out.

    Lastly – pancakes are an excellent food storage item. While the mix itself does not keep extremely well rotation is easy – and enjoyable. It is also very inexpensive.

    Food Storage Recipe: Oven-Roasted Turkey SPAM and Potatoes[2020]

    What foods to store in a food storage program is a popular topic – but what about making meals from that food? Not so much.

    This recipe, I put together something a little different – Turkey SPAM & Canned Potatoes. SPAM is often considered a joke when it comes to food storage but the truth is it’s a viable source of sustenance. As a kid, I used to eat it on a regular basis thinking it came from small SPAM animals that were raised on a farm somewhere. I liked it but once I was old enough to decide what I ate I moved on to other things like……cake. Cake is good.

    Not knowing how well I would like SPAM some 30 years later I grabbed a can of Tukey SPAM. Out to the grill with a cast iron pan and a can of potatoes.

    Here we go…..

    Ingredients

    • 1 can Turkey SPAM(say that 10 times real fast)
    • 1 can Whole Potatoes
    • salt, pepper, seasoning as desired

    Instructions

    • Apply non-stick spray to frying pan or use a seasoned cast iron pan
    • Set temperature to medium to medium-high
    • Open the SPAM, cut into cubes or slices – place in frying pan
    • Open can of potatoes, drain excess fluid – empty into frying pan
    • Cook until browning has occurred on most pieces of SPAM and potatoes.
    • Apply seasoning when food is almost complete.
    • Turn SPAM and stir potatoes every few minutes until done.
    • Serve and enjoy

    While this may not be the most delectable meal, however, I was surprised at just how good the SPAM was. Very good. I could imagine coming in from a cold winter patrol and absolutely loving this meal.

    At 655 calories(50+ grams of protein) this is very filling for one but could be split between two people as well.

    Canned SPAM is an excellent source of protein with a long shelf life – and fairly inexpensive. In this specific meal a simple can of potatoes and can of SPAM makes for a pretty tasty meal.

    What foods to store in a food storage program is a popular topic – but what about making meals from that food? Not so much.

    You can’t get much simpler than preparing Rourke’s Survival Pancakes. The foundation for these pancakes is any “Just Add Water” pancake mix. My favorites include Aunt Jemima and Hungry Jack’s versions.

    Ingredients

    2 cups pancake mix(follow instructions on box)
    1 1/2 cup water
    A pinch or twelve cinnamon sugar
    1 “dash” of Pure Vanilla Extract
    Aunt Jemima syrup

    Instructions

    • Following instructions on box combine pancake mix and water
    • Add the desired amount of cinnamon sugar. Start with a teaspoon. Want more cinnamon flavor? Add more next time. Want less? Add less next time.
    • Add a few drops of vanilla extract. A little goes a long ways.
    • Stir until thoroughly mixed.
    • On a non-stick skillet heated to medium pour a 3″ circle of batter
    • Flip when pancakes bubble and bottoms are golden brown.

    Recipe Tip: Everyone has their own individual tastes so the recipe can be adjusted as needed. Have some canned fruit? Throw some small pieces in. Don’t care for cinnamon? Leave it out.

    Lastly – pancakes are an excellent food storage item. While the mix itself does not keep extremely well rotation is easy – and enjoyable.

    The “perfect hamburger” is often discussed with everyone having their own recipe that tops all others. Well….here’s mine.

    I’ve been making hamburgers mixing A1 Steak Sauce in with the meat for the past few years. Fantastic.  Grilled on a gas grill or charcoal that is up to you.

    Ingredients

    2 pounds hamburger meat – ground chuck or whatever choice you wish

    3-4 tablespoons A1 Steak Sauce

    1/2 teaspoon Weber Steak & Chop seasoning or similar steak seasoning

    Instructions

    • Combine all ingredients in a bowl
    • Form 6 patties pinching each in the center to make the middle thinner(helps even cooking)
    • Place on grill over medium heat
    • Turn every 5-6 minutes until done

     

    Recipe Tip: A1 Steak Sauce can be added at whatever amount needed to provide desired taste. If too much is added the mix will be overly moist and will not hold together when cooked.

    Survival Recipe: No Bake Survival Cookies

    Asteroids could be crashing through the atmosphere and zombies moaning in the streets – many of us will still crave something sweet. Food items like these Peanut Butter/Chocolate No Bake Cookies would serve as a great morale booster in high-stress times.

    Notice something about the ingredient list below. They can all be stored as part of a food storage system. This recipe is something that can be completed with supplies from most food storage programs.

    Ingredients

    2 cups sugar
    1/2 cup milk
    1/2 cup butter
    4 tbsp cocoa
    1/2 cup peanut butter
    3 cups oats (I use whole grain oats rather than quick oats)
    1 tsp vanilla extract

    Instructions

    1. Combine and mix sugar, milk, and cocoa powder then bring to a boil
    2. Boil above for 1 minute, add peanut butter and vanilla, mix thoroughly
    3. Add oatmeal
    4. Mix well
    5. Using a tablespoon scoop mixture out onto wax paper
    6. Allow to cool
    7. Eat up!!!

    These cookies are high in calories – with a good amount of protein and carbs.

    So….when the SHTF it doesn’t have to be all about MRE’s and freeze-dried foods – these Peanut Butter/Chocolate No Bake Cookies would be a welcome treat.

  • Recipe:  Foil Wrapped Garlic Steak & Potato

    Recipe: Foil Wrapped Garlic Steak & Potato

    Note: My wife introduced me to this recipe after seeing it over at Lecremedelacrumb.com.

    This oven or grill steak and potato recipe offers up some savory flavors and can be easily modified depending upon available ingredients.

    Growing up in a meat and potato family(and pasta every Wednesday), this recipe has become a frequent offering at the dinner table.

    Juicy, tender steak with potatoes and an assortment of flavorings including GARLIC  – can’t get much better.

    A few notes:

    • The rarer you desire the steak to be the larger the pieces should be cut.
    • Generally, chunks should be between 1″ – 2″ cubes.
    • Total cook time should be around 20 – 30 minutes.

     

    Ingredients

    • 2-2½ pounds top sirloin steak, trimmed of fat and cut into cubes
    • 1 pound baby yellow potatoes, quartered or halved
    • 3 tablespoons olive oil
    • salt and pepper, to taste
    • 1 tablespoon minced garlic
    • 1 teaspoon onion powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried parsley
    • 1 teaspoon dried thyme

    Note: Weber CHOP ‘N STEAK Seasoning is a multi-use seasoning that can be used if all flavoring ingredients are unavailable.

     

    Instructions

    1. Combine potatoes, steak, olive oil, salt, pepper, garlic, and seasonings in a large bowl.
    2. Tear off four 12 x 12-inch sheets of aluminum foil or 12 x 24 inch to double wrap. Divide steak and potatoes between all four sheets and wrap the foil tightly.
    3. Grill over high heat for approx 20-25 minutes or bake in oven at 425 degrees for 20-25 minutes.
    4. Additional spices can be added by opening the foil packets and add as desired.
     I like boiling or microwaving my potatoes a bit prior to grilling to make sure they are completely done when the steak reaches perfection.
